Rice & Spinach Pie

 

Cooking Time: 20 mins.  |  Good For 4-6 people

  • 2 tbs Olive Oil
  • 1 Small Diced Onion
  • 3 Cloves minced Garlic
  • 6 oz Frozen Spinach 
  • 3 cups cooked Rice
  • 1 Cup Cheddar Cheese
  • 1/2 tsp Black Pepper
  • 1/4 cup milk
  • 4 large eggs - whisked
  • 1/2 pound of chopped bacon
  • Salt to taste

Steps

  1. Preheat oven to 425 degrees Fahrenheit 
  2. Add oil to skillet over medium heat and cook the bacon until almost done
  3. Next add in the onions, Garlic and Spinach to the bacon until fragrant and spinach has wilted. 
  4. Transfer Spinach mixture to a large bowl, add in the cooked rice, cheese, salt, pepper, milk and eggs. Mix well. 
  5. Place your mixture into a 9'' greased pie dish and bake for 25 mins.
  6. Let stand for 5 minutes and enjoy!
