Rice & Spinach Pie
Cooking Time: 20 mins. | Good For 4-6 people
- 2 tbs Olive Oil
- 1 Small Diced Onion
- 3 Cloves minced Garlic
- 6 oz Frozen Spinach
- 3 cups cooked Rice
- 1 Cup Cheddar Cheese
- 1/2 tsp Black Pepper
- 1/4 cup milk
- 4 large eggs - whisked
- 1/2 pound of chopped bacon
- Salt to taste
Steps
- Preheat oven to 425 degrees Fahrenheit
- Add oil to skillet over medium heat and cook the bacon until almost done
- Next add in the onions, Garlic and Spinach to the bacon until fragrant and spinach has wilted.
- Transfer Spinach mixture to a large bowl, add in the cooked rice, cheese, salt, pepper, milk and eggs. Mix well.
- Place your mixture into a 9'' greased pie dish and bake for 25 mins.
- Let stand for 5 minutes and enjoy!
